Electrolysis of water.
Splitting water into its component gases is chemically dramatic and deeply counterintuitive. The visual evidence (gas bubbles appearing at electrodes) converts the abstract chemical equation into a physical event, making the concept of electrolytic decomposition permanently experiential.
